Fire up your oven to 500 , heat up your pan on the stovetop on high for 15-20 minutes.(Yes, it smokes so open up the windows and turn on your fans! ) Flip it over, very quickly slap on the dough , sauce , cheese and toppings. Bake on the top rack - the tricky part is getting it in and out of the oven without scraping the top of your pizza off - for 10 minutes.
